Ingredients:
- 3/4 cup all-purpose flour
- 1/2 teaspoon baking powder
- 1/2 teaspoon ground cinnamon
- 3 large eggs
- 1 cup granulated sugar
- 2 cups grated carrots
- 1/2 cup chopped walnuts (optional)
- 1/2 cup cream cheese, softened
- 1/4 cup butter, softened
- 1 cup powdered sugar
- 1 teaspoon vanilla extract
Directions:
1. Preheat your oven to 350°F (175°C). Grease a 15x10 inch jelly roll pan and line it with parchment paper for easy removal.
2. In a mixing bowl, combine the flour, baking powder, baking soda, and ground cinnamon. This will be the dry mix.
3. In a separate bowl, beat the eggs and granulated sugar together until the mixture is light and fluffy. It should almost look pale in color!
